Step 1 Add chopped tomatoes and onion to your blender with canned tomatoes.

Step 2 Blend until smooth.

Step 3 Toast cumin seeds and cardamom pods in a little oil.

Step 4 Add crushed garlic and grated ginger.

Step 5 Add the pureed tomato and onion. Simmer 2 minutes.

Step 6 Add spices, water and half a vegetable stock cube. Simmer 5 minutes, add salt, simmer 5 more. Sprinkle with cilantro.
