Vegan Irish Soda Bread

Crusty savory Irish soda bread, vegan style! No rising time and bakes up in just 35 minutes.

Step 1 Preheat oven to 430F. Add lemon juice or vinegar to unsweetened plant-based milk.

Step 2 Mix together flours, salt, oat bran and baking soda (bicarbonate) in a bowl.

Step 3 Drizzle olive oil in and work in with your hands until crumbs form. Add the milk and mix until it just comes together.

Step 4 Turn out onto a lined baking tray.  The dough will look like this.

Step 5 Work the dough to form a ball, flatten, and cut a deep cross in it. Bake 35 minutes.

Allow to cool covered with a damp towel and then separate the quarters and cut into thick slices.
