Quick Chipotle Lime Sauce
Delicious tangy smoky addictive chipotle lime sauce, thick and creamy and perfect for dipping, drizzling, slathering and enjoying!

- 4 tablespoons oil Mild e.g. canola, corn etc.
- 6 tablespoons sour cream
- 2 ½ tablespoons lime juice
- 1 ½ tablespoons honey
- Small handful cilantro
- 3-4 chipotle peppers The type stored in adobo sauce
- ½ teaspoon salt
Add all of the ingredients to a small blender bowl or food processor bowl.
Blend or process until smooth. It should be nice and thick but if you prefer a more flowing consistency, you can simply add a little milk or water to thin it.

Sour cream can be substituted with crème fraiche or Greek yogurt, but reduce the lime juice by a tablespoon if you use Greek yogurt.
The oil can be substituted with mayonnaise.
3 peppers yield a medium-spicy sauce, and 4 is hot.
